stored potatoes

After storing our beautiful potatoes the skin has begun to turn green.WHY? They are stored in our heated gargage at 46-50 degres. We live in SOUTH CENT. PA. Nothing else has been affected in the potatoes.They are stored in plastic milk baskets. Also we cleaned them with a power sprayer with clean cold water and left out to dry for about a week. HELP.

Helen,
You must keep your potatoes in the dark to avoid any chlorophyll production in the tubers. Try covering the milk baskets with newspaper or even a blanket - anything to keep them in the dark. You can cut/peel the green parts away before you cook them and they should be OK but get them covered up and out of the light.
